I have shelves full ofthose, plus boxes of recipes on index cards, newspaper clippings, andhand scribbled scraps of paper. I know how to cook, and really can getalong just fine without written instructions. I ordered "A Texas GalCooks" because I sensed it was much more than that. It surely is, andI'm very happy with that decision. As another Texas Gal, from the same little town, this was my chance tomentally revisit my old stomping grounds and recapture some of theflavor of those bygone days as well as the food. To my Yankee husbandand the friends for whom I have ordered copies, it provides a glimpseinto that world and explains what makes me tick. Carolyn introducesus to her many friends and kinfolk, and lets us taste their lifestyle aswell as their food. It's not just about us duplicating their cooking -what it really triggers is our wish to join them as they do it themselves;getting to know them better, and enjoying the results with them. Wesense the pride they have in their art, and the enjoyment they derivefrom sharing it.Although learning a little about Ted (page 123) and his famous catfishdoes make us want to attempt his recipe, that's really secondary. Whatit really does is make us yearn to join him and watch him demonstratehis skill, tasting the result as it comes out of the pan, and seeing thepleasure he derives from pleasing us and accepting our praise for hismagic. Above and beyond the basics, we learn the little tricks of histrade: what pot to select; what oil to use; how to maintain the perfecttemperature; how to make the batter stick to the fillets, and stay there. We come away with the benefits of a lesson and a shared experience. This 200 page book of recipes, presentation tips, gift and craft ideas, pictures, biography, history, stories and remembrances, will probablynot soon join the other cookbooks on your shelf, but will instead findit's home on the table next to your recliner. Randomly open it to anypage and you will be treated to a little adventure. It will make you want totry Carolyn's unique and generous hobbies; it will make you want to visitTexas; it will make you want to share your find with others; it will makeyou hungry! And, it will make you want to cook; but even if you nevercook a single thing, you will find a lot to savor in this treasure of a book.

Each recipe I have made has been wonderful. My family loves all the new things I have been cooking. This book is certainly not your ordinary cookbook. I love the section on making gift baskets. There are all these wonderful recipes and so much more. This is the book that you will not be able to put down. The illustrations are beautifully done and in no way do they compare to other cookbooks. I have had my book for several months, it was a gift from a dear friend. I am using this book several times a week to plan our evening meal. Delightful, refreshing and a whole new concept in the world of cookbooks.
